- 3 large overripe bananas, mashed

- 1 cup unsalted butter, softened

- 1 cup granulated sugar

- 4 large eggs

- 1 ½ cups all-purpose flour

- 1 tsp baking powder

- ½ tsp baking soda

- ½ tsp salt

- 1 tsp vanilla extract

- Optional: ½ tsp cinnamon or chopped walnuts

Method
 

  1. 1. Preheat your oven to 325°F (163°C). Grease a 9x5-inch loaf pan or line with parchment.
    2. Cream the butter and sugar together until light and fluffy.
    3. Add eggs one at a time, mixing well after each.
    4. Stir in mashed bananas and vanilla extract.
    5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and optional cinnamon.
    6. Gradually add dry ingredients to wet, mixing until just combined.
    7. Pour the batter into the prepared loaf pan. Let it sit for 5–10 minutes before baking.
    8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
    9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
